TO USE AS A RUB:
Coat your meat in oil, dust it generously with the seasoning, let it marinate, then grill it to perfection.
TO MAKE A CURRY:
Start by softening onions, garlic, and ginger in ghee or oil. Add the seasoning, stir in passata, then blitz it all in a blender. Brown your chicken separately, then spice it up before bringing everything together in the pan. Add the sauce, simmer, then finish with cream and butter. It’s next-level comfort food.
