Bold hickory smoke made for American-style BBQ
Tubby Tom’s Hickory Wood Smoked Sea Salt Flakes deliver the rich, unmistakable smoke associated with classic American barbecue.
Hickory is one of the most popular smoking woods thanks to its bold but balanced character. It produces a deeper flavour than lighter fruitwoods, combining rich smoke with a subtle suggestion of sweetness and spice.
This makes it an excellent match for strongly flavoured food and substantial cuts of meat. Try it with beef brisket, steak, burgers, pork shoulder or ribs, where the hickory smoke can stand up to long cooking times and rich barbecue sauces.
It can also be used with chicken when you want a more pronounced smoky flavour.
How it tastes
Rich and smoky with subtle sweetness, gentle spice and the bold character of classic American BBQ.
What to use it on
- Beef brisket
- Steak
- Pork shoulder
- Pork ribs
- Burgers
- Sausages
- Pulled pork
- Chicken
- Beans
- Chips and potato wedges
- Homemade popcorn
How to use it
Sprinkle it over cooked food as a crunchy finishing salt to retain the texture and hickory aroma.
It can also be used before cooking to season beef, pork, chicken or vegetables for the barbecue, grill, smoker, slow cooker or oven.
Hickory has a stronger smoke profile than apple or oak, so start with a small amount when seasoning lighter foods and add more to taste.

Storage
Store in a cool, dry and dark place away from direct sunlight, humidity and steam. Reseal after use.
As salt, metal and moisture can cause rust, avoid storing the tin immediately beside a hob, cooker, kettle or other source of steam.
If rust appears, transfer the salt to a clean, dry container before cleaning the empty tin. Make sure the tin is completely dry before refilling it. The tin can also be lined with baking paper to help separate the salt from the metal.
