A delicious recipe prepared on the Big Green Egg tried and tested by us all at Greenfield Services!
• 2 tablespoons extra-virgin olive oil
• 2 salmon fillets, skin on
• salt & pepper
• Unsalted butter
• Big Green Egg Citrus & Dill rub
Set the EGG for direct cooking.
Preheat the EGG to 200°C.
Place the cedar planks in a pan, cover with water, and let soak for 1 hour.
Cover your Salmon in olive oil and salt & pepper. Using the Big Green Egg Citrus & Dill rub, sprinkle your desired amount on the flesh side of the salmon.
Place the cedar planks on the grid, close the lid of the EGG, and preheat for 3 minutes. Place 2 salmon fillets on each plank. Close the lid of the EGG. Cook the salmon for 12 to 15 minutes for medium.
Remove from the heat, garnish with thyme, and serve immediately.
